Tex-Mex Dip

3 medium avocados
2 T lemon juice
1/2 tsp salt
1/4 tsp pepper
(May substitute avocado dip for above ingredients)
1 cup sour cream
1/2 cup mayonnaise
1 pkg taco seasoning mix
2 cans (10 1/2 oz each) bean dip (plain or jalapeno flavored)
1 large bunch green onions with tops, chopped
2 medium tomatoes, chopped
2 cans (3 1/2 oz each) pitted olives, chopped
1 pkg shredded sharp cheddar cheese

Peel, pit and mash avocados with lemon juice, salt and pepper. Combine sour cream, mayonnaise and taco seasoning in a bowl. To assemble: spread bean dip on large serving platter. Top with avocado mixture; layer with sour cream/taco mixture. Sprinkle with onions, tomatoes and olives. Cover with shredded cheese.
