Raw Apple Cake

4 cups cubed apples in a large mixing bowl.
Break 2 eggs over apples and mix.

Add 1/2 cup oil and 1 1/2 tsp vanilla and mix.

Add 2 cups sugar, 1 1/2 tsp cinnamon,
1 1/2 cups chopped dates, 2/3 cup chopped
walnuts and mix.

Add 2 cups flour with 1 1/2 tsp soda and
1 tsp salt.

Mix with spoon til all flour is blended in.

Bake in 9 x 13 pan @ 350 degrees for
45 mn or til done.

Or fill cupcakes 2/3 full for 25 min.

Frost if desired.
