Date Nut Bread
3/4 cup chopped walnuts
1 cup chopped dates - packed
1 1/2 tsp. Baking Soda
1/2 tsp. Salt
1/4 cup Shortening
3/4 cup Boiling Water
1/2 tsp. vanilla
1 cup sugar
1 1/2 cup sifted flour
2 ripe bananas mashed
Combine Nuts, Dates, Soda, and Salt in a bowl.
Add shortening and Boiling water - allow this mixture
to stand for 15 minutes. Stir to blend. Add Bananas.
Beat the eggs slightly, add vanilla. Stir in Sugar and flour
and add to date mixture. Do not overmix.
Place in a greased 9 x 5 x 3" loaf pan. Bake 1 hour or longer
if needed at 350. Check with toothpick to see if done.
Cool before removing. Loosen sides with spatula. Allow to cool
several hours before slicing.
